Description

A classic Italian pasta dish featuring spaghetti tossed in a creamy sauce with crispy pancetta, embodying warmth and family togetherness.


Ingredients

  • 200g spaghetti
  • 100g pancetta
  • 2 large eggs
  • 50g Pecorino Romano cheese, grated
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic (optional)
  • Olive oil (optional)


Instructions

  1. Cook the spaghetti in salted boiling water according to package instructions until al dente.
  2. While the pasta is cooking, heat a pan over medium heat and add the pancetta (and olive oil if using). Cook until crispy.
  3. In a bowl, whisk together the eggs and grated Pecorino Romano cheese, adding a pinch of black pepper.
  4. Once the pasta is done, reserve some pasta water and drain the rest.
  5. Add the hot pasta to the pancetta in the pan, remove from heat, and quickly mix in the egg mixture, adding reserved pasta water as needed to create a creamy sauce.
  6. Serve immediately with additional cheese and black pepper on top.

Notes

Use freshly grated Pecorino Romano cheese for best flavor. Don’t rush the mixing of the egg and pasta to avoid scrambling the eggs.
