Description
A quick and nutritious dinner that combines tender chicken and vibrant green beans in a flavorful sauce.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 lb fresh green beans, trimmed
- 2 tablespoons olive oil or avocado oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup low-sodium soy sauce
- 2 tablespoons water or low-sodium chicken broth
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch mixed with cold water (slurry)
- Optional: red pepper flakes for heat
- Optional garnish: sesame seeds and sliced green onions
Instructions
- Cut the chicken breasts into uniform, bite-sized pieces.
- Heat the oil in a large skillet over medium-high heat.
- Add the chicken to the hot skillet, cooking until golden brown and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the green beans and sauté for about 3-4 minutes.
- Add the minced garlic and ginger to the beans, cooking for another minute until fragrant.
- Return the chicken to the skillet and stir.
- In a small bowl, mix together the soy sauce, water or chicken broth, honey or maple syrup, and the cornstarch slurry.
- Pour the sauce over the chicken and green beans, stirring to combine. Allow it to thicken for 2 minutes.
- Drizzle sesame oil over the dish and add red pepper flakes if desired.
- Serve hot, garnished with sesame seeds and sliced green onions if using.
Notes
For a richer flavor, substitute chicken breasts with thighs. Using a wok can help with tossing ingredients, and feel free to adjust the sauce flavors to your liking.
