Description

A quick and nutritious dinner that combines tender chicken and vibrant green beans in a flavorful sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil or avocado oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons water or low-sodium chicken broth
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with cold water (slurry)
  • Optional: red pepper flakes for heat
  • Optional garnish: sesame seeds and sliced green onions


Instructions

  1. Cut the chicken breasts into uniform, bite-sized pieces.
  2. Heat the oil in a large skillet over medium-high heat.
  3. Add the chicken to the hot skillet, cooking until golden brown and cooked through, about 5-7 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the green beans and sauté for about 3-4 minutes.
  6. Add the minced garlic and ginger to the beans, cooking for another minute until fragrant.
  7. Return the chicken to the skillet and stir.
  8. In a small bowl, mix together the soy sauce, water or chicken broth, honey or maple syrup, and the cornstarch slurry.
  9. Pour the sauce over the chicken and green beans, stirring to combine. Allow it to thicken for 2 minutes.
  10. Drizzle sesame oil over the dish and add red pepper flakes if desired.
  11. Serve hot, garnished with sesame seeds and sliced green onions if using.

Notes

For a richer flavor, substitute chicken breasts with thighs. Using a wok can help with tossing ingredients, and feel free to adjust the sauce flavors to your liking.
