Description

Ingredients

  • 3 (3-inch) sticks cinnamon
  • 5 cloves
  • 4 cardamom pods, pressed until they just crack open
  • 1/4 teaspoon (1 ml) coriander seed
  • 1/2 star anise pod
  • 1 quart (900ml) high-quality apple cider
  • Optional additions (see note): 1 tablespoon (15ml) fruit juice, raw sugar, lemon zest
  • Extra fruit juice, lemon slices, and/or freshly grated nutmeg, for serving (optional)


Instructions

  1. Switch the slow cooker to the highest setting and pour in the apple cider. Place the lid on and set it aside.
  2. Warm a small pan over medium-high heat and introduce the spices. Stir them regularly as they toast, until their aroma emerges and the coriander seeds start to change color. Remove from heat and either place them in a reusable spice bag or add them directly to the cider.
  3. Cover the pot and allow the cider to infuse on high heat for around 4 hours. If it starts bubbling, lower the heat. Approximately 10 minutes before you plan to serve, incorporate the brandy. If the cider tastes too tart, gradually add sugar, one rounded teaspoon at a time, to enhance the spice flavors.
  4. You can serve the cider as is, or add a lemon slice, additional brandy, or a small amount of freshly grated nutmeg. If you intend to keep it warm for serving, take out the spices.
