Ingredients

  • – 2 large Flour Tortillas (12″) (30 cm)
  • – 2 cups Shredded Chicken or Shredded Rotisserie Chicken (480 ml)
  • – 1 tbsp (15 ml). Vegetable Oil
  • – 1/4 cup (60 ml) Hot Sauce
  • – 1/4 tsp (1 ml). Garlic Powder
  • – Salt & Cracked Black Pepper to taste
  • – 1/2 cup Shredded Cheddar Cheese (60 g)
  • – 1/4 cup (60 ml) Ranch Dressing
  • – 1/4 cup chopped Red Onions (40 g)
  • – 1/4 cup chopped Green Onions (40 g)
  • – 1/4 cup (60 ml) chopped Cucumber Pickles
  • – 3 cups chopped Romaine Lettuce (180 g)
  • – handful Microgreens optional


Instructions

  1. Tear apart the rotisserie chicken into pieces in a mixing bowl. In another smaller bowl, blend the vegetable oil, hot sauce, garlic powder, and a dash of cracked black pepper until smooth. Pour this spicy mixture over the chicken and mix thoroughly to ensure the chicken is well coated.
  2. Add the shredded cheese, red onions, green onions, chopped pickles, and ranch dressing to the spicy chicken blend. Taste it, add a sprinkle of salt and pepper if desired, and set it aside.
  3. Heat the tortillas in the microwave for about 20 seconds. Lay them flat on a surface. Distribute the romaine lettuce evenly across the center of each tortilla.
  4. Spoon approximately one cup of the chicken mixture onto each tortilla, spreading it over the romaine.
  5. Optionally, sprinkle with microgreens, then fold the tortillas into burritos to create two wraps. Slice each wrap in half and serve.
