Ingredients
- – 2 large Flour Tortillas (12″) (30 cm)
- – 2 cups Shredded Chicken or Shredded Rotisserie Chicken (480 ml)
- – 1 tbsp (15 ml). Vegetable Oil
- – 1/4 cup (60 ml) Hot Sauce
- – 1/4 tsp (1 ml). Garlic Powder
- – Salt & Cracked Black Pepper to taste
- – 1/2 cup Shredded Cheddar Cheese (60 g)
- – 1/4 cup (60 ml) Ranch Dressing
- – 1/4 cup chopped Red Onions (40 g)
- – 1/4 cup chopped Green Onions (40 g)
- – 1/4 cup (60 ml) chopped Cucumber Pickles
- – 3 cups chopped Romaine Lettuce (180 g)
- – handful Microgreens optional
Instructions
- Tear apart the rotisserie chicken into pieces in a mixing bowl. In another smaller bowl, blend the vegetable oil, hot sauce, garlic powder, and a dash of cracked black pepper until smooth. Pour this spicy mixture over the chicken and mix thoroughly to ensure the chicken is well coated.
- Add the shredded cheese, red onions, green onions, chopped pickles, and ranch dressing to the spicy chicken blend. Taste it, add a sprinkle of salt and pepper if desired, and set it aside.
- Heat the tortillas in the microwave for about 20 seconds. Lay them flat on a surface. Distribute the romaine lettuce evenly across the center of each tortilla.
- Spoon approximately one cup of the chicken mixture onto each tortilla, spreading it over the romaine.
- Optionally, sprinkle with microgreens, then fold the tortillas into burritos to create two wraps. Slice each wrap in half and serve.
