Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon (15 ml) Cajun seasoning
  • 2 tablespoons (30 ml) olive oil
  • 8 ounces (227 g) fettuccine pasta (225 grams)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup (240 ml) heavy cream (240 milliliters)
  • 1/2 cup (120 ml) chicken broth (120 milliliters)
  • 1/2 cup (120 ml) grated halal-friendly cheese (50 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 teaspoon (1 ml) cayenne pepper (optional)
  • 2 tablespoons (30 ml) chopped fresh parsley


Instructions

  1. Season the chicken breasts with Cajun seasoning on both sides.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for 6-7 minutes per side until cooked through.
  4. Remove the chicken from the skillet and let it rest.
  5. In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions. Drain and set aside.
  6. In the same skillet, add the remaining tablespoon of olive oil over medium heat.
  7. Sauté the red bell pepper, green bell pepper, and onion until tender, about 5 minutes.
  8. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  9. Stir in the heavy cream and chicken broth, bringing the mixture to a simmer.
  10. Add the Parmesan cheese, salt, black pepper, and cayenne pepper, stirring until the cheese melts.
  11. Slice the cooked chicken into thin strips.
  12. Add the sliced chicken and cooked fettuccine to the skillet, tossing to combine.
  13. Cook for 2-3 minutes until everything is heated through.
  14. Garnish with chopped fresh parsley before serving.
