Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon (15 ml) Cajun seasoning
- 2 tablespoons (30 ml) olive oil
- 8 ounces (227 g) fettuccine pasta (225 grams)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup (240 ml) heavy cream (240 milliliters)
- 1/2 cup (120 ml) chicken broth (120 milliliters)
- 1/2 cup (120 ml) grated halal-friendly cheese (50 grams)
- Salt, to taste
- Black pepper, to taste
- 1/4 teaspoon (1 ml) cayenne pepper (optional)
- 2 tablespoons (30 ml) chopped fresh parsley
Instructions
- Season the chicken breasts with Cajun seasoning on both sides.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 6-7 minutes per side until cooked through.
- Remove the chicken from the skillet and let it rest.
- In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions. Drain and set aside.
- In the same skillet, add the remaining tablespoon of olive oil over medium heat.
- Sauté the red bell pepper, green bell pepper, and onion until tender, about 5 minutes.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in the heavy cream and chicken broth, bringing the mixture to a simmer.
- Add the Parmesan cheese, salt, black pepper, and cayenne pepper, stirring until the cheese melts.
- Slice the cooked chicken into thin strips.
- Add the sliced chicken and cooked fettuccine to the skillet, tossing to combine.
- Cook for 2-3 minutes until everything is heated through.
- Garnish with chopped fresh parsley before serving.
