Ingredients

  • 2 Tbsp. soy sauce (30 ml)
  • 1 Tbsp. dark brown sugar (15 g)
  • 1 tsp (5 ml). vegetarian soy sauce
  • 1 Tbsp (15 ml). sambal oelek or Sriracha, plus more for serving
  • 2 Tbsp. vegetable oil (30 ml)
  • 3 scallions, white and pale green parts only, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1 lb. ground chicken (450 g)
  • Salt
  • Bibb lettuce leaves, lime wedges, and tender herbs (for serving)


Instructions

  1. Combine the soy sauce, dark brown sugar, vegetarian soy sauce, and 1 tablespoon of sambal oelek in a small dish; put this mixture aside.
  2. Warm the vegetable oil in a frying pan over medium heat. Toss in the scallions and garlic, stirring every so often, until they soften; a bit of browning is fine, approximately 3 minutes.
  3. Introduce the ground chicken to the pan, lightly sprinkle with salt, and continue cooking. Break the chicken apart with a wooden spoon while occasionally stirring until it is fully cooked, about 5–7 minutes.
  4. Pour the previously prepared soy sauce mixture into the skillet and stir occasionally until the liquid is nearly evaporated, roughly 2 minutes.
  5. Present the cooked chicken mixture alongside lettuce leaves, fresh herbs, lime wedges, and additional sambal oelek for assembling lettuce wraps.

Notes

  • Consider using low-sodium soy sauce or tamari for a more robust flavor.
  • Adjust salt according to your taste preference as soy sauce is naturally salty.
  • Customize the spiciness by adding more or less sambal oelek or Sriracha to your liking.
