Ingredients
- 2 Tbsp. soy sauce (30 ml)
- 1 Tbsp. dark brown sugar (15 g)
- 1 tsp (5 ml). vegetarian soy sauce
- 1 Tbsp (15 ml). sambal oelek or Sriracha, plus more for serving
- 2 Tbsp. vegetable oil (30 ml)
- 3 scallions, white and pale green parts only, thinly sliced
- 2 garlic cloves, finely chopped
- 1 lb. ground chicken (450 g)
- Salt
- Bibb lettuce leaves, lime wedges, and tender herbs (for serving)
Instructions
- Combine the soy sauce, dark brown sugar, vegetarian soy sauce, and 1 tablespoon of sambal oelek in a small dish; put this mixture aside.
- Warm the vegetable oil in a frying pan over medium heat. Toss in the scallions and garlic, stirring every so often, until they soften; a bit of browning is fine, approximately 3 minutes.
- Introduce the ground chicken to the pan, lightly sprinkle with salt, and continue cooking. Break the chicken apart with a wooden spoon while occasionally stirring until it is fully cooked, about 5–7 minutes.
- Pour the previously prepared soy sauce mixture into the skillet and stir occasionally until the liquid is nearly evaporated, roughly 2 minutes.
- Present the cooked chicken mixture alongside lettuce leaves, fresh herbs, lime wedges, and additional sambal oelek for assembling lettuce wraps.
Notes
- Consider using low-sodium soy sauce or tamari for a more robust flavor.
- Adjust salt according to your taste preference as soy sauce is naturally salty.
- Customize the spiciness by adding more or less sambal oelek or Sriracha to your liking.
