Crispy taquito rolls filled with spicy shredded chicken, creamy cheeses, and Hatch green chiles, perfect for gatherings.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup cream cheese
- 1/2 cup diced Hatch green chiles
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Corn tortillas
- Oil for frying
Instructions
- In a mixing bowl, combine the shredded chicken, shredded cheese, cream cheese, diced Hatch green chiles, garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined.
- Heat a skillet over medium heat and warm the corn tortillas for a few seconds on each side until pliable.
- Place a spoonful of the chicken mixture onto each tortilla and roll it tightly.
- In the same skillet, heat oil for frying.
- Fry the taquitos in batches until golden brown and crispy, about 2-3 minutes per side.
- Remove from the oil and place on paper towels to drain excess oil.
- Serve hot with your favorite dipping sauce.
Notes
For extra crispiness, consider double-frying the taquitos. They can also be baked for a healthier option.
