Ingredients

  • 8 chicken thighs, boneless, skinless (about 907g)
  • 2 teaspoons vegetable oil (10 ml)
  • 2 teaspoons granulated garlic (4g)
  • 2 teaspoons chili powder (4g)
  • 1/2 teaspoon onion powder (1g)
  • 1/2 teaspoon coriander (1g)
  • 1 teaspoon kosher salt (5g)
  • 1 teaspoon cumin (2g)
  • 1/2 teaspoon chipotle chili powder (1g)
  • 1/2 cup honey (120 ml)
  • 1 tablespoon cider vinegar (15 ml)


Instructions

  1. Blend the spices for the rub in a bowl until thoroughly combined.
  2. Trim any extra fat from the chicken using kitchen shears or scissors, and pat the pieces dry. Pour oil over the chicken and use your hands to ensure all pieces are lightly coated. Next, toss the chicken with the spice blend to cover all sides evenly. Grill the chicken for 3-5 minutes on each side until fully cooked. Use a digital thermometer to check that the chicken reaches at least 165°F, but aim for 170-175°F for better taste and texture.
  3. While the chicken is grilling, heat the honey in the microwave to make it less thick. Stir in the vinegar until mixed well. Set aside 2 tablespoons of the honey mixture for later. Brush the remaining glaze onto both sides of the chicken during the last moments of grilling.
  4. Before serving, drizzle the chicken with the reserved glaze.
