Ingredients
- 1 tablespoon lime juice (15 ml)
- 1 1/2 teaspoons agave syrup (7.5 ml)
- 1/4 teaspoon (1 ml) salt
- 2 cups shredded cabbage (180 g)
- 1/4 cup thinly sliced green onions (15 g)
- 1 tablespoon vegetable oil (15 ml)
- 1 1/4 lb boneless skinless chicken thighs, cut into 1/2-inch pieces (about 4 or 5 thighs) (567 g)
- 1 medium red bell pepper, chopped
- 1 medium jalapeño chile, seeded and finely chopped
- 1 packet (24 g) taco seasoning mix
- 2 tablespoons lime juice (30 ml)
- 2 tablespoons agave syrup (30 ml)
- 1 box (153 g) Hint of Lime Yellow Corn Stand ‘n Stuff Taco Shells (10 Count), heated as directed on box
Instructions
- In a medium-sized bowl, combine 1 tablespoon of lime juice, 1 1/2 teaspoons of agave syrup, and salt. Toss in the shredded cabbage and thinly sliced green onions; mix well to coat evenly. Set this mixture aside.
- In a 12-inch nonstick skillet, warm the vegetable oil over medium to high heat. Add the chopped chicken thighs; sauté for about 2 minutes, stirring often. Incorporate the red bell pepper, jalapeño, and taco seasoning mix; continue to sauté for another 2 to 4 minutes, stirring continuously, until the chicken is thoroughly cooked.
- Pour in the remaining 2 tablespoons of lime juice and 2 tablespoons of agave syrup; cook for an additional 1 to 2 minutes or until the liquid slightly thickens.
- Distribute the cooked chicken mixture into the heated taco shells. Finish by adding the prepared slaw on top.
