Ingredients
- 1 cup (240 ml) rice
- 1 teaspoon (5 ml) vegetable oil
- 2 cups (480 ml) water
- 2 ripe mangoes, diced
- 1 jalapeño, diced
- 1/2 onion, diced
- 1/2 bunch cilantro, diced
- Juice of 1/2 lime
- 1 teaspoon (5 ml) salt
- 1 package Just Meats Hawaiian Teriyaki Chicken
Instructions
- Wash the rice thoroughly. Place it in a pot with vegetable oil and water, then bring it to a rolling boil.
- Cover the pot, lower the heat, and let it gently cook for 15 minutes until all the water is absorbed.
- In the meantime, in a medium-sized bowl, combine the mangoes, jalapeño, onion, cilantro, lime juice, and salt, stirring them together well.
- Preheat a skillet over medium-high heat. Cook the Hawaiian Teriyaki Chicken for 2 minutes, then set it aside.
- Spoon your preferred amount of rice and chicken into a serving bowl. Add a generous portion of the mango mixture on top, and enjoy.
