Ingredients

  • 1 cup (240 ml) rice
  • 1 teaspoon (5 ml) vegetable oil
  • 2 cups (480 ml) water
  • 2 ripe mangoes, diced
  • 1 jalapeño, diced
  • 1/2 onion, diced
  • 1/2 bunch cilantro, diced
  • Juice of 1/2 lime
  • 1 teaspoon (5 ml) salt
  • 1 package Just Meats Hawaiian Teriyaki Chicken


Instructions

  1. Wash the rice thoroughly. Place it in a pot with vegetable oil and water, then bring it to a rolling boil.
  2. Cover the pot, lower the heat, and let it gently cook for 15 minutes until all the water is absorbed.
  3. In the meantime, in a medium-sized bowl, combine the mangoes, jalapeño, onion, cilantro, lime juice, and salt, stirring them together well.
  4. Preheat a skillet over medium-high heat. Cook the Hawaiian Teriyaki Chicken for 2 minutes, then set it aside.
  5. Spoon your preferred amount of rice and chicken into a serving bowl. Add a generous portion of the mango mixture on top, and enjoy.
