Ingredients
- 2 boneless, skinless chicken breasts (about 450 g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon chili powder (2 g)
- 1/2 teaspoon ground cumin (1 g)
- 1/2 teaspoon paprika (1 g)
- 1/4 teaspoon cayenne pepper (0.5 g)
- 1/2 teaspoon garlic powder (1 g)
- 1/2 teaspoon onion powder (1 g)
- 1/2 teaspoon salt (3 g)
- 1/4 teaspoon black pepper (0.5 g)
- 1 ripe mango, peeled and diced
- 1/4 cup red bell pepper, finely chopped (40 g)
- 1/4 cup fresh parsley, chopped (10 g)
- 1 lime, juiced
- 8 small corn tortillas
- 1 avocado, sliced
- 1/4 cup Greek yogurt (60 ml)
- 1 jalapeño, sliced (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Place the chicken breasts on a baking sheet.
- Drizzle olive oil over the chicken.
- In a small bowl, mix chili powder, cumin, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.
- Rub the spice mixture evenly over both sides of the chicken breasts.
- Bake the chicken in the oven for 25-30 minutes or until cooked through.
- While the chicken cooks, prepare the mango salsa.
- In a medium bowl, combine diced mango, red onion, cilantro, and lime juice.
- Mix the salsa ingredients well and set aside.
- Remove chicken from the oven and let it rest for 5 minutes.
- Slice the chicken into thin strips.
- Warm the corn tortillas in a dry skillet over medium heat for about 1 minute on each side.
- Place a few slices of chicken on each tortilla.
- Top with mango salsa, avocado slices, and a dollop of sour cream.
- Add jalapeño slices if desired for extra heat.
- Serve the tacos immediately and enjoy.
