Ingredients
- 1 pound (454 g) ground beef
- 1 tablespoon (15 ml) vegetable oil
- 1 tablespoon (15 ml) minced garlic
- 2 teaspoons (10 ml) fresh grated ginger
- 2 tablespoons (30 ml) honey
- 2 tablespoons (30 ml) almond butter
- 2 tablespoons (30 ml) tomato paste
- 4 tablespoons (60 ml) chili paste (sambal oelek)
- 4 tablespoons (60 ml) low sodium soy sauce or tamari
- 2 tablespoons (30 ml) rice vinegar
- 1/4 teaspoon (1 ml) red pepper flakes
- 1 1/2 cups (355 ml) water
- 12 ounces (340 g) rice noodles
- Cilantro and peanuts to serve
Instructions
- Place a large pot of water on the stove and bring it to a boil, then prepare the noodles as directed on the package. Cook them until they are firm to the bite, as they will continue cooking in the sauce.
- Warm the vegetable oil in a pan and add the ground beef.
- Cook until it is fully browned and cooked through.
- Incorporate the ginger and garlic, cooking for another 1-2 minutes.
- Mix in the honey, almond butter, tomato paste, chili paste, soy sauce, and rice vinegar.
- Stir for about 1-2 minutes to allow the flavors to meld.
- Pour in the water and let it come to a gentle boil. Let it simmer for roughly 10 minutes to allow it to thicken.
- When the sauce has mostly thickened, add the noodles. The noodles will further thicken the sauce. Simmer to blend all the flavors.
- Top with fresh cilantro, chopped peanuts, and red pepper flakes. Enjoy your meal!
