Ingredients

  • 1 pound (454 g) ground beef
  • 1 tablespoon (15 ml) vegetable oil
  • 1 tablespoon (15 ml) minced garlic
  • 2 teaspoons (10 ml) fresh grated ginger
  • 2 tablespoons (30 ml) honey
  • 2 tablespoons (30 ml) almond butter
  • 2 tablespoons (30 ml) tomato paste
  • 4 tablespoons (60 ml) chili paste (sambal oelek)
  • 4 tablespoons (60 ml) low sodium soy sauce or tamari
  • 2 tablespoons (30 ml) rice vinegar
  • 1/4 teaspoon (1 ml) red pepper flakes
  • 1 1/2 cups (355 ml) water
  • 12 ounces (340 g) rice noodles
  • Cilantro and peanuts to serve


Instructions

  1. Place a large pot of water on the stove and bring it to a boil, then prepare the noodles as directed on the package. Cook them until they are firm to the bite, as they will continue cooking in the sauce.
  2. Warm the vegetable oil in a pan and add the ground beef.
  3. Cook until it is fully browned and cooked through.
  4. Incorporate the ginger and garlic, cooking for another 1-2 minutes.
  5. Mix in the honey, almond butter, tomato paste, chili paste, soy sauce, and rice vinegar.
  6. Stir for about 1-2 minutes to allow the flavors to meld.
  7. Pour in the water and let it come to a gentle boil. Let it simmer for roughly 10 minutes to allow it to thicken.
  8. When the sauce has mostly thickened, add the noodles. The noodles will further thicken the sauce. Simmer to blend all the flavors.
  9. Top with fresh cilantro, chopped peanuts, and red pepper flakes. Enjoy your meal!
