Ingredients
- 4 boneless, skinless chicken thighs (or breasts)
- 1 cup fresh pineapple chunks
- 1/2 cup brown sugar
- 1 tablespoon soy sauce
- 1-2 teaspoons crushed red pepper flakes (adjust to taste)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: green onions or cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine brown sugar, soy sauce, and crushed red pepper flakes and stir until well mixed.
- Season the chicken with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown.
- Remove chicken from heat, pour the brown sugar mixture over the chicken, and add pineapple chunks on top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let rest for a few minutes. Serve hot.
