A wholesome dinner merging the flavors of spinach and artichoke with creamy cottage cheese atop tender chicken.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1 can artichoke hearts, drained and chopped
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons cream cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
- In a mixing bowl, combine chopped spinach, artichokes, cottage cheese, cream cheese, and half of the mozzarella cheese.
- Place the chicken breasts in a baking dish and spoon the spinach-artichoke mixture generously on top of each piece.
- Sprinkle the remaining mozzarella cheese over the mixture.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
Notes
For a healthier version, substitute low-fat cottage cheese and reduce cream cheese. Fresh herbs can enhance presentation.
