Ingredients

  • 2 small flour tortillas (small)
  • 85 g cooked beef, shredded (3 oz)
  • 30 ml beef broth (2 tbsp)
  • 240 ml fresh spinach (1 cup)
  • 60 ml red pepper, cooked and diced (1/4 cup)
  • 5 ml vegetable oil (1 tsp)
  • 60 ml cheddar cheese, shredded (1/4 cup)
  • 5 ml black pepper, ground (1/8 tsp)
  • 5 ml chili powder (1/8 tsp)
  • 60 ml salsa (1/4 cup)
  • 5 ml cumin, ground (1/8 tsp)
  • 30 ml plain yogurt (2 tbsp)


Instructions

  1. Place the shredded beef, beef broth, and seasonings into a sauté pan and heat on medium, stirring from time to time.
  2. Add the diced red pepper and fresh spinach, cooking until the spinach wilts.
  3. In another sauté pan, heat the vegetable oil on medium. Lay one flour tortilla in the pan and press down to coat it with oil. Take this tortilla out and lay it oil-side up on a surface, then place the second tortilla in the pan.
  4. Sprinkle cheddar cheese over the tortilla and let it cook for about 30 seconds. Lift the tortilla slightly to prevent sticking.
  5. Distribute the beef and spinach mixture evenly over the melted cheese, then use a spatula to lift the tortilla out of the pan.
  6. Place the first oiled tortilla back in the pan and let it brown. Once browned, remove and layer it on top of the beef and spinach mixture.
  7. Press down on the quesadilla with a spatula, then slice it into four equal pieces using a pizza cutter.
  8. Serve alongside salsa and plain yogurt. Enjoy!
