Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh or frozen spinach
- 1 cup cream cheese (softened)
- ½ cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Optional: fresh herbs for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- If using frozen spinach, thaw and squeeze out excess moisture. If using fresh, wash and chop it finely.
- In a bowl, mix the spinach, cream cheese, mozzarella, garlic powder, onion powder, salt, and pepper until well combined.
- Use a sharp knife to create a pocket in each chicken breast, taking care not to slice through.
- Stuff each chicken breast generously with the spinach mixture.
- Place the stuffed chicken breasts in a greased baking dish and drizzle with olive oil.
- Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before serving.
Notes
For additional flavor, sauté garlic in olive oil before mixing into the stuffing. Feel free to experiment with different cheese types for varied textures.
