Description

Delicious spinach stuffed chicken breasts, a healthy low-carb dinner option, combining protein and greens for a satisfying meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen spinach
  • 1 cup cream cheese (softened)
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using frozen spinach, thaw and squeeze out excess moisture. If using fresh, wash and chop it finely.
  3. In a bowl, mix the spinach, cream cheese, mozzarella, garlic powder, onion powder, salt, and pepper until well combined.
  4. Use a sharp knife to create a pocket in each chicken breast, taking care not to slice through.
  5. Stuff each chicken breast generously with the spinach mixture.
  6. Place the stuffed chicken breasts in a greased baking dish and drizzle with olive oil.
  7. Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Let the chicken rest for a few minutes before serving.

Notes

For additional flavor, sauté garlic in olive oil before mixing into the stuffing. Feel free to experiment with different cheese types for varied textures.
