  • 1/2 tbsp (8 ml) lime juice
  • Salt & pepper to taste
  • 1 cup (240 ml) fresh pineapple, diced
  • 1/2 cup (120 ml) red bell pepper, diced
  • 1/4 cup (60 ml) red onion, finely chopped
  • 1 small tomato, diced
  • 2 tbsp (30 ml) chopped cilantro
  • Juice of 1/2 lime
  • Pinch of salt
  • 2 cup (480 ml) s cooked jasmine or basmati rice
  • 2 tbsp (30 ml) chopped cilantro
  • Juice of 1/2 lime
  • Salt to taste
