Ingredients
- 11/2 lb (2.49 kg) s boneless chicken breast or thighs, cut into chunks
- 2 tbsp (30 ml) honey
- 2 tbsp (30 ml) soy sauce
- 2 cloves garlic, minced
- 1 tbsp (15 ml) olive oil
- 1/2 tbsp (8 ml) lime juice
- Salt & pepper to taste
- 1 cup (240 ml) fresh pineapple, diced
- 1/2 cup (120 ml) red bell pepper, diced
- 1/4 cup (60 ml) red onion, finely chopped
- 1 small tomato, diced
- 2 tbsp (30 ml) chopped cilantro
- Juice of 1/2 lime
- Pinch of salt
- 2 cup (480 ml) s cooked jasmine or basmati rice
- 2 tbsp (30 ml) chopped cilantro
- Juice of 1/2 lime
- Salt to taste
