Ingredients
- 11/2 lb (2.49 kg) s boneless chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp (30 ml) honey
- Juice and zest of 1 lime
- 2 tbsp (30 ml) soy sauce
- 1 tbsp (15 ml) olive oil
- 2 cloves garlic, minced
- 1/2 tsp (3 ml) chili flakes (optional )
- Salt & pepper to taste
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/4 cup (60 ml) red onion, finely chopped
- 2 tbsp (30 ml) chopped cilantro
- Juice of 1/2 lime
- Pinch of salt
- 2 cup (480 ml) s cooked jasmine or basmati rice
- Extra lime wedges
- Optional : drizzle of hot honey or sriracha
Instructions
- Step 1: Prepare the Chicken Marinade
- In a medium-sized bowl, combine honey, lime juice and zest, soy sauce, olive oil, minced garlic, chili flakes (if desired), salt, and pepper. Stir thoroughly to mix. Add the chicken pieces and toss until they are evenly coated with the marinade. Allow the chicken to soak in the flavors for a minimum of 10–15 minutes. For a more intense taste, you can let it chill in the refrigerator for up to 4 hours.
