Description
A juicy chicken dish with a sweet twist using strawberry jam, enhanced by balsamic vinegar and fresh basil.
Ingredients
- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts
- ½ teaspoon sea salt
- ¼ cup strawberry jam
- 1 tablespoon good quality balsamic vinegar
- 1 tablespoon water
- ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
- 2 tablespoons crumbled goat cheese (optional)
- ¼ cup fresh strawberries (sliced, optional)
Instructions
- Heat olive oil in a medium skillet over medium-high heat. Season chicken breasts with salt and place in the pan. Cook for about 4-5 minutes on one side until golden crust forms.
- Flip and cook for another 4-5 minutes or until chicken is fully cooked through.
- Whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
- Pour the sauce over the chicken when it’s nearly finished, nestling the chicken into the sauce.
- Reduce heat and bring sauce to a simmer, letting it bubble for 2-3 minutes until thickened.
- Stir in most of the basil and simmer for another minute.
- Remove chicken from the pan and pour the sauce over each piece.
- Garnish with goat cheese, basil, and sliced strawberries if desired.
Notes
For a variation, try substituting the strawberry jam with peach or raspberry. Add garlic or shallots while cooking for extra flavor.
