Description

A juicy chicken dish with a sweet twist using strawberry jam, enhanced by balsamic vinegar and fresh basil.


Ingredients

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • ½ teaspoon sea salt
  • ¼ cup strawberry jam
  • 1 tablespoon good quality balsamic vinegar
  • 1 tablespoon water
  • ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
  • 2 tablespoons crumbled goat cheese (optional)
  • ¼ cup fresh strawberries (sliced, optional)


Instructions

  1. Heat olive oil in a medium skillet over medium-high heat. Season chicken breasts with salt and place in the pan. Cook for about 4-5 minutes on one side until golden crust forms.
  2. Flip and cook for another 4-5 minutes or until chicken is fully cooked through.
  3. Whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
  4. Pour the sauce over the chicken when it’s nearly finished, nestling the chicken into the sauce.
  5. Reduce heat and bring sauce to a simmer, letting it bubble for 2-3 minutes until thickened.
  6. Stir in most of the basil and simmer for another minute.
  7. Remove chicken from the pan and pour the sauce over each piece.
  8. Garnish with goat cheese, basil, and sliced strawberries if desired.

Notes

For a variation, try substituting the strawberry jam with peach or raspberry. Add garlic or shallots while cooking for extra flavor.
