A refreshing and satisfying chicken salad bursting with flavors of strawberries, pecans, and a creamy dressing, perfect for warm summer days.
Ingredients
- 2 cups shredded chicken
- 2 celery stalks, chopped into 1/4 inch pieces
- 1 green onion, chopped thin
- 5-6 large strawberries, diced
- â…“ cup chopped pecans
- ¼ cup mayonnaise
- 2 tablespoons plain Greek yogurt
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon poppy seeds
- ½ teaspoon pepper
- Salt to taste
Instructions
- Cut and chop all ingredients as specified above.
- Add all the ingredients except for the strawberries in a mixing bowl.
- Stir to combine and ensure everything is evenly coated.
- Adjust the consistency by adding more mayo or yogurt if desired.
- Fold in strawberries gently. You can also wait to add them until just before serving if preparing in advance.
- Serve immediately or chill for about 10-20 minutes before serving to enhance the flavors.
Notes
Use rotisserie chicken for convenience and adjust the dressing based on your creaminess preference. Letting the salad chill enhances the flavors.
