Description

A refreshing and satisfying chicken salad bursting with flavors of strawberries, pecans, and a creamy dressing, perfect for warm summer days.


Ingredients

  • 2 cups shredded chicken
  • 2 celery stalks, chopped into 1/4 inch pieces
  • 1 green onion, chopped thin
  • 5-6 large strawberries, diced
  • â…“ cup chopped pecans
  • ¼ cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • ½ teaspoon pepper
  • Salt to taste


Instructions

  1. Cut and chop all ingredients as specified above.
  2. Add all the ingredients except for the strawberries in a mixing bowl.
  3. Stir to combine and ensure everything is evenly coated.
  4. Adjust the consistency by adding more mayo or yogurt if desired.
  5. Fold in strawberries gently. You can also wait to add them until just before serving if preparing in advance.
  6. Serve immediately or chill for about 10-20 minutes before serving to enhance the flavors.

Notes

Use rotisserie chicken for convenience and adjust the dressing based on your creaminess preference. Letting the salad chill enhances the flavors.
