Description

A delightful fusion of marinated chicken, sweet corn, and fresh vegetables served over a bed of rice, inspired by vibrant street food flavors.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breasts, diced
  • 1 cup sweet corn (fresh or canned)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  2. Stir in the sweet corn and cook for an additional 2-3 minutes until heated through.
  3. Combine the cooked rice, chicken and corn mixture, diced bell pepper, and chopped cilantro in a large bowl.
  4. Squeeze fresh lime juice over the top and mix gently to combine.
  5. Serve in bowls, topped with sliced avocado and additional cilantro if desired.
