Description

A hearty and colorful bowl combining juicy chicken, vibrant corn, and creamy avocado for a nutritious meal reminiscent of summer fairs.


Ingredients

  • 1 pound lean chicken breast
  • 2 cups cooked rice
  • 1 cup corn (fresh or canned)
  • 1 avocado, diced
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • 1 teaspoon chili powder (optional)
  • Fresh cilantro for garnish (optional)


Instructions

  1. In a skillet over medium heat, cook the chicken breast until fully cooked, about 6-7 minutes per side. Season with salt, pepper, and chili powder if using.
  2. In a bowl, combine the cooked rice, corn, diced avocado, and lime juice. Stir to mix well.
