Description

A refreshing summer salad combining sweet corn, crunchy cucumbers, and a creamy dressing, perfect for barbecues and picnics.

Ingredients

  • 2 cups fresh corn kernels (or canned corn)
  • 1 medium cucumber (English preferred)
  • 1 cup cherry tomatoes (Grape tomatoes can be substituted)
  • 1/2 medium red onion (or green onions for milder taste)
  • 1 cup feta cheese (or goat cheese, or omit)
  • 1/4 cup cilantro (optional)
  • 1/3 cup mayonnaise (or Greek yogurt for lighter option)
  • 1/3 cup sour cream (or more Greek yogurt)
  • 2 tablespoons lime juice (or lemon juice)
  • 1 teaspoon chili powder (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine corn kernels, diced cucumber, halved cherry tomatoes, and chopped red onion.
  2. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, and chili powder.
  3. Mix the creamy dressing into the bowl of fresh vegetables until evenly coated.
  4. Fold in feta cheese and cilantro gently.
  5. Season with salt and pepper to taste, adjusting chili powder as needed.
  6. Chill for at least 30 minutes before serving.

Notes

Use fresh ingredients for the best flavor. Consider using Greek yogurt to lighten the dressing.
