Ingredients
- 2 chicken breasts
- 1 cup sundried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese (optional) for serving
Instructions
- In a skillet, heat the olive oil over medium heat.
- Add the chicken breasts and cook until browned and thoroughly cooked, approximately 5-7 minutes on each side.
- Remove the chicken and set aside.
- In the same skillet, add the minced garlic and sauté until fragrant.
- Stir in the chopped sundried tomatoes and fresh spinach, cooking until the spinach wilts.
- Pour in the heavy cream and oregano, stirring to combine all ingredients.
- Season with salt and pepper to taste.
- Return the chicken to the skillet, coating it in the rich sauce.
- Allow it to simmer for a few minutes, ensuring everything is heated through.
- Serve hot, optionally garnished with grated Parmesan cheese.
