Description

Ingredients

  • 1/4 cup (60 ml) fresh pineapple juice
  • 2 cloves garlic, minced
  • 2 tablespoons (30 ml) water
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 tablespoon (15 ml) low sodium soy sauce
  • 2 tablespoons (30 ml) brown sugar
  • 2 tablespoons (30 ml) ketchup
  • 1 tablespoon (15 ml) cornstarch
  • 1 1/4 lbs. (570 g) boneless skinless chicken breasts or boneless skinless chicken thighs, cut into bite-size pieces
  • 1/3 cup (80 ml) cornstarch
  • 2-3 tablespoons (30-45 ml) vegetable oil
  • 1 medium onion, large dice
  • 1 green bell pepper, seeded, large dice
  • 1 red bell pepper, seeded, large dice
  • 1 1/2 cups (360 ml) fresh pineapple chunks
  • 2 pinches red pepper flakes
  • salt and pepper to taste
  • Optional: Cooked Rice or Chinese noodles


Instructions

  1. In a small saucepan, mix together pineapple juice, garlic, water, vinegar, soy sauce, brown sugar, ketchup, and 1 tablespoon of cornstarch. Heat on low, stirring often, until the mixture thickens. Cover and set aside.
  2. Place the chicken pieces in a large plastic bag with 1/3 cup of cornstarch. Seal and shake until the chicken is evenly covered.
  3. Warm vegetable oil in a big frying pan over medium-high heat. Add the chicken, shaking off any extra cornstarch first. Cook until browned on all sides and fully cooked, around 4-5 minutes. Lower the heat if necessary to prevent over-browning or sticking. Take the chicken out and set it on a plate.
  4. Add 1 tablespoon of oil to the same pan over medium-high heat. Put in the onion and sauté for 1-2 minutes. Add the diced peppers and continue cooking for another 2-3 minutes, stirring often.
  5. Turn the heat down to low; return the chicken to the pan with the peppers and onions and cook for 1 minute. Pour the prepared sauce into the pan, along with the pineapple, red pepper flakes, and some salt. Stir gently to combine and heat until everything is warmed through. Serve over cooked rice or Chinese noodles.

Notes

  • Consider using boneless skinless chicken breasts for a healthier option.
  • Ensure to remove excess cornstarch from the chicken before cooking to prevent clumping.
  • Adjust the red pepper flakes to suit your preferred level of spiciness.
