Description

A nostalgic dish featuring tender chicken breast, sweet pineapple, and colorful vegetables in a tangy sauce.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • Salt and pepper to taste


Instructions

  1. Mix soy sauce, vinegar, brown sugar, and cornstarch in a bowl to create the sauce.
  2. Heat vegetable oil in a pan over medium heat. Add chicken pieces and cook until golden brown and fully cooked, about 5-7 minutes.
  3. Add minced garlic, chopped onion, and bell pepper to the pan. Stir-fry for a few minutes until tender.
  4. Bring in pineapple chunks and pour the sauce over the stir-fry, stirring well. Cook for an additional 3-5 minutes until the sauce thickens.
  5. Season with salt and pepper to taste. Serve hot over rice or steamed vegetables.

Notes

For extra flavor, consider marinating the chicken in a bit of the sauce 30 minutes before cooking. Adjust the sweetness to your liking by modifying the brown sugar amount.
