Ingredients

  • 8 boneless skinless chicken thighs, trimmed
  • 1 1/2 tablespoons (22 ml) vegetable oil
  • 2 teaspoons (4 g) garlic powder
  • 1 1/2 teaspoons (3 g) chili powder
  • 1 1/4 teaspoons (6 g) salt
  • 1 teaspoon (2 g) ground cumin
  • 1 teaspoon (2 g) onion powder
  • 1/2 teaspoon (1 g) smoked paprika
  • 1/2 teaspoon (1 g) paprika
  • 1/2-1 teaspoon (2-4 g) chipotle chili powder
  • 1/3 cup (80 ml) honey
  • 1 tablespoon (15 ml) beef mustard
  • 1 tablespoon (15 ml) yellow mustard
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 teaspoon (5 ml) lemon juice


Instructions

  1. Cover a baking tray with aluminum foil and lightly coat it with cooking spray. Put it aside.
  2. In a medium-sized bowl, combine the Chicken Rub Ingredients and thoroughly coat the chicken with the mixture. Arrange the chicken on the prepared tray.
  3. Adjust the oven rack to the highest position and broil the chicken for 6 minutes on each side, totaling 12 minutes.
  4. While the chicken is broiling, mix the Honey Dijon Sauce ingredients in a small bowl.
  5. Take the chicken out of the oven and apply the Honey Dijon Sauce to the top side; broil for an additional 1-2 minutes or until fully cooked.
  6. Apply the remaining Honey Dijon Sauce on individual servings as preferred.

Notes

  • For a spicier kick, increase chipotle chili powder to 1 teaspoon.
  • Enhance the smoky taste by using smoked sea salt instead of regular salt.
  • To make the sauce tangier, add 2 tablespoons of apple cider vinegar.
