Ingredients
- 2 chicken breasts
- 1/2 cup sweet chili sauce
- 1 cup jasmine rice
- 1 bell pepper, sliced
- 2 carrots, sliced
- 1 cucumber, sliced
- 1/2 cup coconut milk
- 2 tablespoons lime juice
- Salt, to taste
- Pepper, to taste
- 1 tablespoon olive oil
Instructions
- Cook jasmine rice according to package instructions.
- In a skillet, heat olive oil over medium heat and cook the chicken breasts until browned and cooked through.
- Glaze the chicken with sweet chili sauce and cook until heated through, about 2-3 minutes.
- Slice the chicken and set aside.
- In the same skillet, stir fry the bell peppers, carrots, and cucumber until crisp-tender.
- For the drizzle, combine coconut milk and lime juice in a bowl, mixing well and seasoning with salt and pepper to taste.
- To serve, place jasmine rice in a bowl, top with chicken slices, stir-fried vegetables, and drizzle with coconut lime sauce.
