Ingredients
- – 2 boneless skinless chicken breasts, about 1 pound (454 g)

- – 3 tablespoons (45 ml) vegetable oil, for frying
- – 1/4 cup (68 g) sweet chili sauce
- – 2 tablespoons (30 ml) soy sauce
- – 2 teaspoons (10 ml) hot sauce
- – 1 teaspoon (5 ml) garlic, minced
- – 1/2 teaspoon (3 ml) ground ginger
- – 1 tablespoon (15 ml) honey
- – 2 cups (480 ml) cooked white rice, for serving
- – green onions, chopped for garnish
- – sesame seeds, for garnish
Instructions
- Dry the chicken with paper towels and slice each breast into ½-inch pieces.
- In a big mixing bowl, blend cornstarch, paprika, salt, and pepper. Add the chicken pieces, ensuring they are well-coated.
- In a large, nonstick pan on medium-high heat, pour in the oil. Once the oil is hot, place the chicken pieces in the pan and fry until they are golden from all sides, which should take around 5-7 minutes. Ensure the chicken is fully cooked by checking it has reached an internal temperature of 165°F. Move the chicken to a plate and cover it loosely to maintain warmth while you make the sauce.
- In the same pan, pour in the sweet chili sauce, soy sauce, hot sauce, garlic, ginger, and honey. Mix everything thoroughly and let it heat through.
- Return the cooked chicken to the pan and stir it until it is thoroughly coated with the sauce.
- Serve the chicken over the prepared white rice, and sprinkle with chopped green onions and sesame seeds for garnish.
