Ingredients

  • 4 Chicken thighs
  • 2 cups Rice
  • 1/2 cup Sweet chili sauce
  • 2 tbsp Soy sauce
  • 2 cloves Garlic (minced)
  • 1 tbsp Ginger (grated)
  • 1 cup Vegetables (bell peppers, broccoli, or your choice)
  • Green onions (for garnish)
  • Sesame seeds (for garnish)


Instructions

  1. Cook the rice according to package instructions.
  2. In a bowl, mix sweet chili sauce, soy sauce, minced garlic, and grated ginger to create the glaze.
  3. Heat a pan over medium heat and cook the chicken thighs until golden brown and cooked through. Pour the glaze over the chicken and let it simmer for a few minutes.
  4. Stir-fry your choice of vegetables in a separate pan until tender.
  5. Serve the cooked rice in bowls, topped with the glazed chicken, vegetables, and garnish with green onions and sesame seeds.

Notes

Marinate chicken thighs in glaze for at least 30 minutes for extra flavor. Use a rice cooker for ease.
