Ingredients
- 1 pound (454 g) boneless, skinless chicken breasts (about 450 grams)
- 1/4 cup (60 ml) sweet chili sauce (60 milliliters)
- 1 tablespoon (15 ml) soy sauce (15 milliliters)
- 1 tablespoon (15 ml) honey (15 milliliters)
- 1 tablespoon (15 ml) lime juice (15 milliliters)
- 1 clove garlic, minced
- 1 teaspoon (5 ml) ground ginger (5 grams)
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1/4 teaspoon (1 ml) black pepper (1.25 grams)
- 8 small corn tortillas
- 1 cup (240 ml) shredded lettuce (about 70 grams)
- 1/2 cup (120 ml) diced tomatoes (about 75 grams)
- 1/4 cup (60 ml) chopped cilantro (about 15 grams)
- 1/4 cup (60 ml) plain yogurt (60 milliliters)
- 1 lime, cut into wedges for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine sweet chili sauce, soy sauce, honey, lime juice, minced garlic, ground ginger, salt, and black pepper.
- Place chicken breasts in a baking dish.
- Pour the sauce mixture over the chicken, ensuring it’s well coated.
- Bake the chicken in the oven for 25-30 minutes, or until fully cooked.
- Remove the chicken from the oven and let it rest for 5 minutes.
- Shred the chicken using two forks.
- Warm the corn tortillas in a dry skillet over medium heat for 1-2 minutes per side.
- Place a portion of shredded chicken on each tortilla.
- Top with shredded lettuce, diced tomatoes, and chopped cilantro.
- Drizzle with sour cream.
- Serve tacos with lime wedges on the side.
