A quick and flavorful sweet chili chicken recipe, perfect for weeknight dinners that brings smiles to the dinner table.
Ingredients
- 12 oz. skinless boneless chicken breast (or thigh, cut into small pieces)
- Oil (for deep-frying)
- 1 tablespoon oil
- 2 cloves garlic (minced)
- 4 tablespoons Thai sweet chili sauce (bottled)
- 1 teaspoon lime juice
- 1 pinch salt
- 1/2 teaspoon white sesame
- 1/2 tablespoon chopped cilantro leaves
- 1 egg white
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 cup ice cold water
- 1 tablespoon cooking oil
- 1 pinch salt
Instructions
- Mix all the ingredients for the batter until well combined, then add the chicken to the batter. Coat all chicken pieces thoroughly.
- Heat a wok or skillet with about two inches of oil. Once the oil is fully heated, deep-fry the chicken until golden brown.
- Transfer the chicken to a dish lined with paper towels to absorb the excess oil.
- Clean the wok or skillet and heat it over medium heat. Add the oil and stir-fry the garlic until aromatic.
- Add the fried chicken to the skillet, followed by the sweet chili sauce, lime juice, and salt. Stir well to coat the chicken with the sauce.
- Dish out the chicken and garnish with white sesame seeds and cilantro leaves. Serve immediately.
Notes
For crispier chicken, monitor the frying temperature closely and avoid overcrowding the pan.
