Description

A quick and flavorful sweet chili chicken recipe, perfect for weeknight dinners that brings smiles to the dinner table.


Ingredients

  • 12 oz. skinless boneless chicken breast (or thigh, cut into small pieces)
  • Oil (for deep-frying)
  • 1 tablespoon oil
  • 2 cloves garlic (minced)
  • 4 tablespoons Thai sweet chili sauce (bottled)
  • 1 teaspoon lime juice
  • 1 pinch salt
  • 1/2 teaspoon white sesame
  • 1/2 tablespoon chopped cilantro leaves
  • 1 egg white
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 cup ice cold water
  • 1 tablespoon cooking oil
  • 1 pinch salt


Instructions

  1. Mix all the ingredients for the batter until well combined, then add the chicken to the batter. Coat all chicken pieces thoroughly.
  2. Heat a wok or skillet with about two inches of oil. Once the oil is fully heated, deep-fry the chicken until golden brown.
  3. Transfer the chicken to a dish lined with paper towels to absorb the excess oil.
  4. Clean the wok or skillet and heat it over medium heat. Add the oil and stir-fry the garlic until aromatic.
  5. Add the fried chicken to the skillet, followed by the sweet chili sauce, lime juice, and salt. Stir well to coat the chicken with the sauce.
  6. Dish out the chicken and garnish with white sesame seeds and cilantro leaves. Serve immediately.

Notes

For crispier chicken, monitor the frying temperature closely and avoid overcrowding the pan.
