Ingredients
- 1 pound (450g) boneless, skinless chicken thighs
- 1/4 cup (60ml) sweet chili sauce
- 2 tablespoons (30ml) soy sauce
- 1 tablespoon (15ml) honey
- 4 cloves garlic, minced
- 1 tablespoon (15ml) vegetable oil
- 1 tablespoon (15ml) lime juice
- 1 teaspoon (5g) cornstarch
- 1/4 cup (60ml) water
- Salt, to taste
- Black pepper, to taste
- 1/4 teaspoon (1g) red pepper flakes (optional)
- 2 tablespoons (6g) chopped fresh cilantro
Instructions
- In a small bowl, combine sweet chili sauce, soy sauce, honey, minced garlic, lime juice, and red pepper flakes if using.
- Stir the mixture until well combined and set aside.
- Cut chicken thighs into bite-sized pieces and season with salt and black pepper.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add chicken pieces to the skillet and cook until browned and fully cooked, about 6-8 minutes.
- Remove chicken from the skillet and set aside.
- In the same skillet, add the sauce mixture and bring to a simmer over medium heat.
- In a small bowl, dissolve cornstarch in water to make a slurry.
- Slowly add the cornstarch slurry to the simmering sauce, stirring constantly.
- Cook the sauce until it thickens, about 2-3 minutes.
- Return the chicken to the skillet, tossing to coat with the sauce.
- Cook for an additional 2-3 minutes to heat through.
- Remove from heat and sprinkle with chopped fresh cilantro.
- Serve hot.
