- Green pepper chunks (optional)
Instructions
- Prepare your ingredients: If not done, chop the chicken into bite-sized chunks. If using optional ingredients, chop the Vidalia onion and green pepper.
- Mix the sauce: In a bowl, combine pineapple juice, brown sugar, and low-sodium soy sauce. Stir until the sugar dissolves completely.
- Assemble in the Crock-Pot: Place the chicken chunks into the Crock-Pot. Add in optional pineapple chunks, onion, and green pepper if desired.
- Pour the sauce: Pour the prepared mixture over the chicken and vegetables, ensuring an even coating.
- Cook: Set your Crock-Pot to low and cook for 4-6 hours or on high for 2-3 hours. The chicken becomes tender while the flavors meld together.
