Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- ½ cup soy sauce
- ¼ cup brown sugar
- 2 tablespoons ginger (fresh, grated or ground)
- 2 cloves garlic (minced)
- 1 tablespoon cornstarch (optional, for thickening)
- Cooked rice or wraps (for serving)
Instructions
- Place the chicken breasts in the crockpot.
- In a separate bowl, mix together the pineapple chunks, soy sauce, brown sugar, ginger, and garlic.
- Pour the sauce over the chicken in the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and tender.
- If desired, mix cornstarch with water and stir into the sauce to thicken before serving.
