Description

A delightful blend of chicken, pineapple, and savory sauce, cooked to perfection in a crockpot for a comforting family dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1 tablespoon ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger (optional)
  • Green onions (for garnish, optional)

Instructions

  1. In a crockpot, combine the chicken breasts, pineapple chunks, brown sugar, soy sauce, ketchup, garlic powder, and ginger.
  2. Stir to coat the chicken evenly with the sauce.
  3. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and fully cooked.
  4. Once cooked, shred the chicken using two forks and stir it back into the sauce.
  5. Serve over rice or with your favorite sides, garnished with green onions if desired.

Notes

For a thicker sauce, cook uncovered for a short time after shredding the chicken. This recipe is great for leftovers, perfect for salads or sandwiches.
