  • 1/2 cup (120ml) packed brown sugar

  • 3 tablespoons (45ml) orange juice
  • 1 pinch ground cinnamon
  • 1 (10.5 ounce (298 g)) package miniature marshmallows


Instructions

  1. Collect all the ingredients, and set the oven to 350 degrees F (175 degrees C) to preheat.
  2. Place the sweet potato slices in a sizable pot, add water until covered, and bring to a boil. Cook them until they are soft, roughly 15 minutes. Take them off the heat, drain the water, and mash the potatoes.
  3. Transfer the mashed sweet potatoes into a large mixing bowl. Incorporate the brown sugar, vegetable oil, orange juice, and a pinch of cinnamon, then blend thoroughly with an electric mixer.
  4. Evenly spread the mixture into a 9×13-inch baking dish. Scatter the miniature marshmallows over the top.
