Ingredients
- 5 sweet potatoes, peeled and sliced (750g)
- 1/2 cup (120ml) packed brown sugar
- 1/4 cup (60ml) vegetable oil
- 3 tablespoons (45ml) orange juice
- 1 pinch ground cinnamon
- 1 (10.5 ounce (298 g)) package miniature marshmallows
Instructions
- Collect all the ingredients, and set the oven to 350 degrees F (175 degrees C) to preheat.
- Place the sweet potato slices in a sizable pot, add water until covered, and bring to a boil. Cook them until they are soft, roughly 15 minutes. Take them off the heat, drain the water, and mash the potatoes.
- Transfer the mashed sweet potatoes into a large mixing bowl. Incorporate the brown sugar, vegetable oil, orange juice, and a pinch of cinnamon, then blend thoroughly with an electric mixer.
- Evenly spread the mixture into a 9×13-inch baking dish. Scatter the miniature marshmallows over the top.
- Place in the preheated oven and bake until the dish is warmed through and the marshmallows are puffed up and golden, approximately 25 to 30 minutes.
