A quick weeknight dinner featuring chicken breasts coated in a luscious mango glaze, perfect for a delicious and memorable meal.
Ingredients
- 4 chicken breasts
- 1 cup mango puree
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Sesame seeds for garnish
- Green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C) or heat a skillet over medium-high heat.
- Mix together the mango puree, soy sauce, honey, sesame oil, garlic, and ginger until well combined.
- Season the chicken breasts with salt and pepper.
- For oven-baked: Place the chicken breasts in a baking dish, pour the mango glaze over them, and bake for 25-30 minutes until cooked through.
- For skillet-seared: Add the chicken to the skillet and cook for 6-7 minutes on each side, basting with the glaze until cooked through.
- Once cooked, let the chicken rest for a few minutes, then slice or twist into pieces.
- Serve warm, garnished with sesame seeds and green onions.
Notes
For a thicker glaze, simmer the leftover sauce until it reduces, and consider marinating the chicken for a richer flavor.
