Creamy and zesty Swiss Chicken Enchiladas wrapped in warm tortillas and smothered in cheese, perfect for any occasion.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup salsa verde
- 8 corn tortillas
- 1 cup sour cream
- 2 cups shredded cheese (such as Monterey Jack or Cheddar)
- 1/2 cup chopped cilantro
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine shredded chicken, salsa verde, garlic powder, onion powder, salt, and pepper.
- Heat the corn tortillas in a skillet until softened.
- Spoon some chicken mixture into each tortilla and roll them up.
- Place the rolled tortillas seam-side down in a baking dish.
- In another bowl, mix together sour cream and half of the cheese, then spread this mixture over the enchiladas.
- Top with the remaining cheese and bake for 20-25 minutes, or until bubbly and golden.
- Garnish with chopped cilantro before serving.
