Ingredients
- 1 pound (454 g) lean ground beef
- 1 (1 oz (28 g)) packet taco seasoning
- 1/4 cup (60 ml) water, or beef broth
- 1 cup (240 ml) refried beans, optional
- 2 cup (480 ml) s cooked Mexican rice, or instant Mexican rice
- 4 Burrito sized flour tortillas
- 2 cup (480 ml) s Fritos or Doritos
- 1 cup (240 ml) cheese dip, warmed (like Tostitos)
- 1 cup (240 ml) shredded Mexican cheese blend
- 1/2 cup (120 ml) sour cream
- Salsa, if desired
Instructions
- Brown the ground beef in a skillet, breaking it apart as it cooks until it’s no longer pink. Add the taco seasoning and water, mixing well, and let it cook for an additional minute. Incorporate the refried beans into the mixture. If it’s too thick, add a bit more water to reach your preferred consistency.
- Prepare the Mexican rice as per package instructions or heat up any leftover rice you have. Warm the tortillas by microwaving them for 30 seconds.
- To assemble, lay a tortilla flat and place a few tablespoons of the beef mixture in the center. Spoon a couple of tablespoons of rice on top of the meat. Add a layer of Fritos, a generous spoonful of warmed cheese dip, some shredded cheese, and a dollop of sour cream. Fold in the sides and roll it up tightly from one end to form a burrito. Repeat the process for the remaining tortillas.
- You can serve the burritos as they are or toast them in a pan over medium heat to crisp up the exterior. Serve immediately with salsa, if desired.
