Description

A comforting blend of cornbread and a hearty meat filling, this tamale pie is perfect for family dinners or casual gatherings.


Ingredients

  • Cornbread mix
  • Water
  • Cooked ground beef or turkey
  • Canned diced tomatoes
  • Black beans
  • Corn
  • Chili powder
  • Cheddar cheese
  • Green onions
  • Optional: Jalapeños


Instructions

  1. Preheat the oven according to cornbread mix package instructions.
  2. Prepare the cornbread mix according to package directions.
  3. In a separate bowl, combine cooked ground beef, diced tomatoes, black beans, corn, and chili powder.
  4. In a greased baking dish, spread half of the cornbread mixture on the bottom. Layer the meat mixture on top.
  5. Pour the remaining cornbread batter over the meat mixture.
  6. Sprinkle cheddar cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cornbread is cooked through.
  8. Garnish with green onions and jalapeños, if desired. Serve warm.

Notes

For a spicier version, add extra chili powder or jalapeños to the filling. Leftover meats can be used for added convenience.
