Ingredients
- Cornbread mix
- Water
- Cooked ground beef or turkey
- Canned diced tomatoes
- Black beans
- Corn
- Chili powder
- Cheddar cheese
- Green onions
- Optional: Jalapeños
Instructions
- Preheat the oven according to cornbread mix package instructions.
- Prepare the cornbread mix according to package directions.
- In a separate bowl, combine cooked ground beef, diced tomatoes, black beans, corn, and chili powder.
- In a greased baking dish, spread half of the cornbread mixture on the bottom. Layer the meat mixture on top.
- Pour the remaining cornbread batter over the meat mixture.
- Sprinkle cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cornbread is cooked through.
- Garnish with green onions and jalapeños, if desired. Serve warm.
Notes
For a spicier version, add extra chili powder or jalapeños to the filling. Leftover meats can be used for added convenience.
