Ingredients
- 4 cod fillets (680 g)
- 1 tablespoon olive oil (15 ml)
- Salt and pepper to taste
- 1 can (400 ml) coconut milk
- 2 tablespoons lemon juice (30 ml)
- 1 teaspoon (5 ml) lemon zest
- 2 garlic cloves, minced
- 1 tablespoon (15 ml) grated ginger (optional)
- 1 tablespoon cornstarch mixed with 30 ml water (slurry)
- Fresh parsley or cilantro for garnish
Instructions
- Set your oven to a temperature of 375°F (190°C) to preheat.
- Prepare a baking dish by lightly oiling it, then place the cod fillets inside. Pour olive oil over them and sprinkle with salt and pepper.
- In a saucepan on medium heat, mix together the coconut milk, lemon juice, lemon zest, minced garlic, and grated ginger. Allow the mixture to come to a gentle simmer.
