  • 4 cod fillets (680 g)
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper to taste
  • 1 can (400 ml) coconut milk
  • 2 tablespoons lemon juice (30 ml)
  • 1 teaspoon (5 ml) lemon zest
  • 2 garlic cloves, minced
  • 1 tablespoon (15 ml) grated ginger (optional)
  • 1 tablespoon cornstarch mixed with 30 ml water (slurry)
  • Fresh parsley or cilantro for garnish


Instructions

  1. Set your oven to a temperature of 375°F (190°C) to preheat.
  2. Prepare a baking dish by lightly oiling it, then place the cod fillets inside. Pour olive oil over them and sprinkle with salt and pepper.
