Ingredients
- 3 lbs (1.4 kg) boneless skinless chicken breast, cut into chunks
- 1 cup (240 ml) dill pickle juice
- ½ cup (120 ml) whole milk
- 1 cup (120 g) all purpose flour
- 1 cup (120 g) plain breadcrumbs
- 3 tbsp (45 g) powdered sugar
- 1 tbsp (9 g) garlic powder
- 2 tsp (12 g) salt
- 2 tsp (4 g) paprika
- 1 tsp (5 g) baking powder
- 1 tsp (2 g) black pepper
- vegetable oil*, for frying (at least 2.5 cm deep)
Instructions
- Place the chicken pieces in a large resealable bag and pour in the pickle juice along with the milk. Shake the bag gently to ensure all the chicken is covered, then let it marinate for 20 to 30 minutes. In the meantime, heat oil to 350°F (about 175°C), ensuring it is at least an inch deep.
- In a separate bowl, thoroughly combine the flour, breadcrumbs, powdered sugar, garlic powder, paprika, baking powder, salt, and black pepper.
- Remove the chicken from the marinade and dispose of the liquid. Coat each chicken chunk evenly with the breadcrumb mixture before carefully placing them into the hot oil. Fry in small portions to maintain the oil temperature.
- Cook for 3 to 5 minutes until the nuggets are a rich golden brown, then transfer them to a wire rack to cool slightly. Continue frying the remaining chicken pieces until all are cooked. Enjoy your meal!
