Description

A vibrant and creamy potato salad with a spicy kick from jalapenos, fresh crunch from veggies, and a zesty lime dressing.


Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2-3 jalapenos, finely chopped
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste


Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool, then cut into cubes.
  2. In a large bowl, combine mayonnaise, sour cream, jalapenos, red onion, cilantro, lime juice, salt, and pepper.
  3. Gently fold in the cooled potatoes until well coated.
  4. Refrigerate for at least 1 hour before serving to let the flavors meld.

Notes

For a spicier kick, leave the seeds in the jalapenos or increase the quantity. Chill for longer to enhance flavors.
