A vibrant and creamy potato salad with a spicy kick from jalapenos, fresh crunch from veggies, and a zesty lime dressing.
Ingredients
- 2 pounds Yukon Gold potatoes
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2-3 jalapenos, finely chopped
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender. Drain and let cool, then cut into cubes.
- In a large bowl, combine mayonnaise, sour cream, jalapenos, red onion, cilantro, lime juice, salt, and pepper.
- Gently fold in the cooled potatoes until well coated.
- Refrigerate for at least 1 hour before serving to let the flavors meld.
Notes
For a spicier kick, leave the seeds in the jalapenos or increase the quantity. Chill for longer to enhance flavors.
