Description

A flavorful layered dish combining juicy teriyaki chicken, creamy avocado, and perfectly seasoned sushi rice.


Ingredients

  • 2 cups sushi rice
  • 2 ½ cups water
  • ¼ cup rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 chicken breasts (diced)
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 1 avocado (sliced)
  • Sesame seeds
  • Fresh cilantro
  • Sriracha (optional)


Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a rice cooker or pot and cook until tender.
  3. In a small bowl, mix rice vinegar, sugar, and salt and gently incorporate this into the cooked rice.
  4. Marinate the diced chicken breasts in soy sauce, honey, mirin, and sesame oil for at least 30 minutes.
  5. Cook the marinated chicken in a skillet over medium heat until golden brown and caramelized, about 5–7 minutes.
  6. Assemble the stack with layers of sushi rice, avocado slices, and teriyaki chicken, using a mold if desired.
  7. Garnish with sesame seeds, fresh cilantro, and a drizzle of sriracha if desired.
