Description
A flavorful layered dish combining juicy teriyaki chicken, creamy avocado, and perfectly seasoned sushi rice.
Ingredients
- 2 cups sushi rice
- 2 ½ cups water
- ¼ cup rice vinegar
- 1 tbsp sugar
- 1 tsp salt
- 2 chicken breasts (diced)
- ¼ cup soy sauce
- 2 tbsp honey
- 2 tbsp mirin
- 1 tbsp sesame oil
- 1 avocado (sliced)
- Sesame seeds
- Fresh cilantro
- Sriracha (optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a rice cooker or pot and cook until tender.
- In a small bowl, mix rice vinegar, sugar, and salt and gently incorporate this into the cooked rice.
- Marinate the diced chicken breasts in soy sauce, honey, mirin, and sesame oil for at least 30 minutes.
- Cook the marinated chicken in a skillet over medium heat until golden brown and caramelized, about 5–7 minutes.
- Assemble the stack with layers of sushi rice, avocado slices, and teriyaki chicken, using a mold if desired.
- Garnish with sesame seeds, fresh cilantro, and a drizzle of sriracha if desired.
