Enjoy a comforting blend of flavors and textures with these easy-to-make white rotisserie chicken enchiladas, perfect for weeknight meals or gatherings.
Ingredients
- 2 cups rotisserie chicken, shredded
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 can (10 oz) cream of chicken soup
- 1 cup green enchilada sauce
- 8-10 flour tortillas
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the shredded rotisserie chicken, cream cheese, sour cream, half of the shredded cheese, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Spread a small amount of green enchilada sauce in the bottom of a baking dish.
- Take a tortilla, fill it with the chicken mixture, roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas and filling.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Serve warm and enjoy your delicious enchiladas!
Notes
For a spicy version, add diced jalapeños to the filling. Experiment with cheese types for unique flavors.
