Ingredients
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large orange bell pepper, cut into 1-inch pieces
- 1 red onion, peeled and cut into 1-inch pieces
- 1 medium zucchini, cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- Pinch of black pepper
- 1 package chicken sausage (12 oz), preferably with a robust Italian flavor
Instructions
- Start by chopping all your veggies as specified. Place them in a large bowl.
- Drizzle the avocado oil over the veggies and toss well to ensure even coating.
- In a smaller bowl, combine garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Mix thoroughly.
- Add this spice blend to the vegetables in the large bowl, tossing again to coat everything evenly.
- Slice the chicken sausage into 3/4 inch rounds and add them to the veggie bowl. Toss the mixture together until it looks well integrated.
- Preheat your air fryer to 390 degrees F. Spray the basket with cooking spray.
- Spread the veggie and sausage mixture evenly in the air fryer basket. Keep it in a single layer for optimal crisping.
- Cook for 10 minutes, flipping halfway through to ensure even cooking.
- Once done, remove the contents and serve immediately.
