A delicious blend of teriyaki chicken, grilled pineapple, and fresh vegetables served over rice for a satisfying meal.
Ingredients
- 2 cups cooked rice
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup teriyaki sauce (either homemade or store-bought)
- 1 cup pineapple, grilled and diced
- 1 cup bell peppers, sliced
- 1 cup edamame, shelled
- 1 tablespoon vegetable oil
- Sesame seeds for garnish
- Chopped green onions for garnish
Instructions
- Heat the vegetable oil in a skillet over medium heat. Add the chicken pieces and cook until browned and cooked through.
- Pour the teriyaki sauce over the chicken and stir to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- In a separate grill pan, grill the pineapple and bell peppers until slightly charred.
- To assemble the bowls, start with a base of rice, then add the teriyaki chicken, grilled pineapple, bell peppers, and edamame.
- Garnish with sesame seeds and chopped green onions before serving.
Notes
For added flavor, consider marinating the chicken in teriyaki sauce for 30 minutes prior to cooking.
