Description

A delicious blend of teriyaki chicken, grilled pineapple, and fresh vegetables served over rice for a satisfying meal.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup teriyaki sauce (either homemade or store-bought)
  • 1 cup pineapple, grilled and diced
  • 1 cup bell peppers, sliced
  • 1 cup edamame, shelled
  • 1 tablespoon vegetable oil
  • Sesame seeds for garnish
  • Chopped green onions for garnish


Instructions

  1. Heat the vegetable oil in a skillet over medium heat. Add the chicken pieces and cook until browned and cooked through.
  2. Pour the teriyaki sauce over the chicken and stir to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  3. In a separate grill pan, grill the pineapple and bell peppers until slightly charred.
  4. To assemble the bowls, start with a base of rice, then add the teriyaki chicken, grilled pineapple, bell peppers, and edamame.
  5. Garnish with sesame seeds and chopped green onions before serving.

Notes

For added flavor, consider marinating the chicken in teriyaki sauce for 30 minutes prior to cooking.
