Description

A delightful combination of boneless chicken breasts and fresh pineapple cooked in foil packets for a sweet and savory dinner that’s easy to prepare and clean up.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1 tablespoon olive oil
  • ¼ cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional, for garnish)
  • 2 sheets of aluminum foil


Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Lay out two large sheets of aluminum foil.
  3. In a small bowl, mix teriyaki sauce, soy sauce, honey, garlic powder, and ginger powder.
  4. Brush chicken breasts with olive oil, seasoning with salt and pepper.
  5. Place chicken breast on the foil, pouring the sauce mixture over them.
  6. Add pineapple chunks around the chicken.
  7. Fold the sides of the foil over the chicken and pineapple to create sealed packets.
  8. Cook on the grill or in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F.
  9. Carefully open packets, garnish with cilantro if desired, and serve immediately.

Notes

For added flavor, consider adding vegetables such as bell peppers or snap peas to the foil packets.
