A delightful combination of boneless chicken breasts and fresh pineapple cooked in foil packets for a sweet and savory dinner that’s easy to prepare and clean up.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1 tablespoon olive oil
- ¼ cup teriyaki sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey (optional)
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional, for garnish)
- 2 sheets of aluminum foil
Instructions
- Preheat your grill or oven to 400°F (200°C).
- Lay out two large sheets of aluminum foil.
- In a small bowl, mix teriyaki sauce, soy sauce, honey, garlic powder, and ginger powder.
- Brush chicken breasts with olive oil, seasoning with salt and pepper.
- Place chicken breast on the foil, pouring the sauce mixture over them.
- Add pineapple chunks around the chicken.
- Fold the sides of the foil over the chicken and pineapple to create sealed packets.
- Cook on the grill or in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F.
- Carefully open packets, garnish with cilantro if desired, and serve immediately.
Notes
For added flavor, consider adding vegetables such as bell peppers or snap peas to the foil packets.
