Description

A delightful dish featuring tender chicken, savory teriyaki sauce, and fluffy rice, perfect for weeknight dinners.


Ingredients

  • 4 boneless skinless chicken breasts, cubed
  • 1 Tbsp. olive oil
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup water
  • 3 Tbsp. packed light brown sugar
  • 2 Tbsp. rice vinegar
  • 1/2 tsp. sesame oil (optional)
  • 1 tsp. ground ginger
  • 2 tsp. minced garlic
  • 2 Tbsp. honey
  • 3 tsp. cornstarch
  • Sesame seeds and chopped green onions for garnish
  • Rice for serving
  • Steamed veggies for serving


Instructions

  1. Heat olive oil in a large skillet over medium-high heat and add cubed chicken pieces. Cook until browned and no longer pink in the center.
  2. In a medium mixing bowl, whisk together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil (if using), ground ginger, minced garlic, and cornstarch until well combined.
  3. Pour the teriyaki sauce into the skillet with the cooked chicken and stir until the sauce thickens and coats the chicken.
  4. Serve the teriyaki chicken over bowls of rice with steamed vegetables on the side. Garnish with sesame seeds and chopped green onions.

Notes

For extra flavor, consider marinating the chicken in teriyaki sauce for 30 minutes before cooking.
